Instructions
- Preheat the oven to 400 degrees F.
- In a large bowl, stir together the shredded chicken, rice, cooked veggies, baby spinach, and Cilantro. Put about 2/3 of the Thai basil sauce in and add more until desired moistness (we like it pretty moist so typically use all the sauce). Taste and season as needed with salt and pepper.
- Spray a large baking dish with avocado oil. Add the Thai rice and chicken mixture and spread evenly. Pop in the oven for about 20 minutes.
- Remove and let cool for about 5 minutes. Serve with Green onions and drizzle with Aji Verde Sauce.
