Instructions

  1. In a bowl, add the roasted pineapple chunks, roasted jalapeños, Roasted Red Peppers and Onions, Cilantro, and lime juice. Taste and season with salt.
  2. In the microwave or on the stove, heat up the salmon.
  3. In a large skillet over high heat, heat the tortillas for about 30 seconds on each side. Add to a plate with a dish towel, and cover them so they stay warm.
  4. To each warmed tortilla, add the shredded salmon and top with the pineapple salsa.
  5. On each plate, add the two tacos, mixed greens, and sliced avocado. Drizzle with Basil Lime Vinaigrette. Serve the tacos with lime slices.
