Instructions
- In a bowl, add the roasted pineapple chunks, roasted jalapeños, Roasted Red Peppers and Onions, Cilantro, and lime juice. Taste and season with salt.
- In the microwave or on the stove, heat up the salmon.
- In a large skillet over high heat, heat the tortillas for about 30 seconds on each side. Add to a plate with a dish towel, and cover them so they stay warm.
- To each warmed tortilla, add the shredded salmon and top with the pineapple salsa.
- On each plate, add the two tacos, mixed greens, and sliced avocado. Drizzle with Basil Lime Vinaigrette. Serve the tacos with lime slices.
