Instructions
- In a large skillet, over high heat, add the bolognese and spread evenly. Let sit and cook without touching. After 4-5 minutes, stir the bolognese and cook for another few minutes before removing from the heat.
- While cooking, heat the rice and Roasted Zucchini in the microwave.
- In each bowl, add mixed greens, rice, zucchini, avocado, and the caramelized bolognese. Top with basil, parmesan, and Green onions. Drizzle with Basil Lime Vinaigrette.
