Instructions

  1. Preheat the oven to 375 degrees F. Line two sheet pans with parchment paper.
  2. Using a measuring spoon or cookie dough scooper, measure out 1 tablespoon for 16 of the falafels. Then use your hands and press the balls into flat little patties.
  3. Make the rest of the dough into a round ball. Use a knife and cut it evenly into four sections. Make each into a small ball and then flatten into a patty about the size of your bun.
  4. Spray the tiny and big patties with the avocado spray on top and put into the oven.
  5. Cook the small ones for about 10 minutes, flip them, and spray with more oil. Put back into the oven for another 10 minutes.
  6. Take the big patties out of the oven, flip, and also spray with more avocado oil. Cook for about 14 more minutes. Reserve the big falafel patties for Falafel Burgers.
  7. While cooking, in each bowl, add the mixed greens and baby spinach. Top with a big scoop of hummus, Tabbouleh, Roasted Tomatoes, Red Onions, and cucumber. Top with the small falafels, add pita bread, and drizzle with Creamy Harissa Sauce.
