Instructions
- On the cutting board, small dice the carrots, celery, and onion. Add to a larger bag or container and refrigerate.
- Get a medium/large bowl and add water to it. Chop the very tops and bottoms off the leeks. Thinly slice the leeks. To clean the leeks well, add the sliced leeks to the bowl of water and swish around in the water. Let sit for a few minutes so the sediment can settle to the bottom. Remove the leeks to a plate covered with paper towels or a towel and spread onto a single layer, drying as best you can with more paper towels. Let sit and dry before putting in a separate bag/container and refrigerating.
