Instructions

  1. Preheat the oven to 375 degrees F. Place parchment paper on a large sheet pan.
  2. Put the Lemon Marinaded Chicken on the sheet pan, shaking off most of the marinade as you lay it out. Season with salt and pepper.
  3. Put in the oven for 25-30 minutes, until the chicken is 165 degrees F. Once fully cooked, let it sit on the counter for about 5 minutes. Slice about two of the chicken breasts (if massive, reserve some of the breast). Reserve the rest of the chicken for Chicken, Sweet Potato, and Roasted Broccoli Salad and Greek Chicken Ditalini.
  4. While cooking, heat the Roasted broccoli in the microwave.
  5. To serve, place a bed of arugula and top with Marinaded Chickpeas, Roasted Broccoli, sliced chicken, lemon slices, and Parsley.

Notes

Components to Save:

Reserve 2/3 chicken for Chicken, Sweet Potato, and Roasted Broccoli Salad and Greek Chicken Ditalini
