Instructions

  1. In a large skillet over medium-high heat, add olive oil and heat through. Sauté the yellow onion for 3-4 minutes or until translucent. Add the garlic and cook for about a minute, until fragrant. Add the zucchini, mushrooms, corn, and Red onion. Season with salt and pepper. Sauté until the veggies have softened, stirring occasionally, about 8-10 minutes. Remove from the pan.
  2. Add a little olive oil to the pan, heat, and add the shrimp in a single layer, not overcrowding. Cook for 2-3 minutes, until lightly pink. Turn over and cook for another 1-2 minutes. Remove immediately. Finish cooking all the shrimp.
  3. To serve, place the veggies on the bottom, top with the shrimp, a drizzle of Sweet Korean Marinade, and top with Cilantro.
