- In a large pot, add the ground beef over medium-high heat and break it up, allowing the crumbles to brown. Season with salt and pepper. Cook until browned.
- Add the Diced onion and cook another 3-4 minutes. Add the Chopped Cabbage, diced tomatoes, crushed tomatoes, beef broth, and Italian seasoning and stir well. Allow to come to a boil, and then reduce to a simmer, cooking about 15 minutes. Taste and season with more salt as needed.
- While cooking, heat the rice in the microwave.
- In each bowl, add rice into the bottom. Top with the soup and stir well. Garnish with Green onions.
