- In a large skillet over medium high heat, dry “fry” the Sliced mushrooms by adding the mushrooms to the hot skillet and allowing to brown for 3-4 minutes on each side. Salt and pepper once they’re cooked and remove to a plate.
- On a large cutting board, assemble the quesadillas. Add a thin layer of Shredded cheese to the tortilla. Top with spinach, mushrooms, a sprinkle of taco seasoning, and another thin layer of cheese.
- In the skillet over medium heat, add a little butter for each quesadilla. Add the quesadillas and top with aluminum foil so the radiating heat helps melt the cheese. Flip after 3-4 minutes. Cook on the other side for about the same time.
- Slice and serve with sliced avocado (salt it) and Lime Chili Dressing.
