Instructions

  1. Preheat the oven to LOW broil. Line two large sheet pans with parchment paper.
  2. In a bowl, combine the tomato paste and red curry paste.
  3. Start an assembly line (helpers encouraged). On each tostada smear a thin layer of the curry/tomato paste mixture. Keep it thin so the tostada won’t get soggy. Top each tostada with a few Zucchini Slices, Roasted Peppers, Red onion, and corn.
  4. Pop in the oven for 2-3 minutes, until tostadas and veggies are just heated through (don’t walk away).
  5. Top each tostada with torn mint and Green onions.
