
Sweet and Spicy Meatloaf Subs with Carrot Salad

Instructions
- Heat a large nonstick skillet over medium heat. Put the meatloaf slices in the pan and heat/brown on each side for 3-4 minutes. Remove the meatloaf and tent with aluminum foil to keep it warm.
- Add the cooked peppers and onions to the microwave and heat until warmed.
- While cooking, open the hoagie rolls and add to the same skillet, toasting the inside for 2-3 minutes until lightly browned. Remove the hoagie rolls and put mayonnaise on one side, and Sweet and Spicy Sauce on the other side of the roll. Add mixed greens on the bottom, top with the meatloaf, and the cooked peppers and onions.
- Serve the meatloaf sub with carrot salad and garnish with additional peanuts.
