Instructions
- Cook the rice of your choice according to the instructions. Once cooked, reserve 3 cups for Ham and Pineapple Fried Rice. In the rice saucepan, add the seasoned rice vinegar to the rest of the rice and stir well.
- Preheat oven to 425 degrees F.
- While waiting, in a bowl, add the diced crab meat, diced shrimp, mayonnaise, softened cream cheese, soy sauce, sesame oil, sriracha, and lime juice. Stir together well.
- In a 8x8 dish, add the seasoned rice to the bottom and spread evenly, pressing into the dish so it’s compacted. Top with the sheet(s) of nori so that it’s covered. On top of the nori, spread the crab mixture evenly across the nori. Bake in the oven for 12-15 minutes, until seafood is cooked through and slightly browned. Remove from the oven.
- While cooking, prep the cucumber by slicing into thin rounds.
- On top of the crab mixture, cover with the cucumber rounds (overlap them slightly). Garnish with the diced avocados, Green onions, sriracha, and sesame seeds.
- Slice when ready to serve.
