Instructions
- In a large pot, heat water over high heat until boiling. Add salt and the pasta and cook according to the instructions, occasionally stirring.
- Strain the pasta. In the large pot add the pasta, Chickpea Salad, and as much Chimichurri Sauce as you like (we usually use the majority of it depending how much is left). Taste and season with more salt and pepper as needed.
- Serve over arugula and garnish with Green onions and Parsley to taste.
