Instructions
- Chop up the bell pepper, cherry tomatoes, and red onions.
- In a large bowl, combine the chickpeas and diced veggies. Stir together. Put in the smallest container you can, cover, and refrigerate.
- In a small bowl or jar, combine the olive oil, red wine vinegar, oregano, lemon juice, minced garlic, salt and pepper. Cover and refrigerate.
