Instructions
- Preheat the oven to high broil and put the rack near to the top (about 6-8 inches away).
- Line a sheet pan with aluminum foil.
- Cut all the poblanos in half and remove the stem and seeds. Lay the poblanos on the sheet pan flat and spray with olive oil on both sides. Put in the oven and broil for 6-8 minutes, until the peppers are black.
- Remove from the oven and put in a bowl. Seal the bowl with seran wrap so that you steam the peppers for 15 minutes. Continue with your Main Day.
- Once steamed, run the the knife gently on the skins and the skins will peel off. Remove what you can. Repeat for the other peppers. Stack them once finished and cut into strips and gently dice. Let finish cooling and put in a small container before refrigerating.
