Instructions

  1. Heat a wok with olive oil over high heat. Add the Cajun Veggies, Red Onions, cajun seasoning, and smoked paprika once heated and cook, stirring often, 8-12 minutes (depending how well cooked you like your veggies). We like ours still slightly crunchy so we cook about 8 minutes. Add the sliced smoked sausage from the day before and heat through. Taste and season with more salt and pepper if needed. Reserve any leftover veggies for the Enchilada Casserole. Chop into small pieces before refrigerating if you like so assembling the enchilada casserole is easier!
  2. While cooking, heat the cauliflower rice in the microwave.
  3. To serve, add a bed of arugula, top with cauliflower rice, and then with the cooked sausage and vegetables. Garnish with Parsley and Green onions. Drizzle with Chipotle Lime Dressing.
