Instructions
- In a medium large pan, cook the rice according to the instructions, usually 15 minutes. Reserve 1/2 the rice for African Peanut Stew.
- Mix 1/3 the remaining tomatoes into the Lemony Lentil Salad.
- In each bowl, add a layer of Iceberg Lettuce and spinach to the bottom. Top with rice, Lemony Lentil Salad (leave mint out), a scoop of harissa, Bell peppers, feta, and add torn basil and Parsley over everything. Drizzle with Creamy Basil Dressing.
