Instructions

  1. If needed, chop the stew beef into small chunks.
  2. Over medium high heat, add the olive oil and heat well. Add the beef and season well with salt and pepper. Stir and cook for 7-10 minutes. Add the Diced Onion, Diced Red Pepper, tomato paste and cook for another 5 minutes. Add the water, stock, cayenne pepper and a touch of salt and bring to a boil for 5 minutes. Reduce heat, add peanut butter and stir well. Add the cornstarch slurry (water and the cornstarch mixed together) and let it cook and thicken for another 5 minutes. Remove from heat and let sit off 3-5 minutes (it will thicken further). Taste and season with more salt if needed. Reserve about 3/4 cup of the stew liquid and a handful of stew beef (cut into smaller pieces now if you like) for the African Peanut Pizza.
  3. While cooking, heat rice in the microwave.
  4. Serve stew with rice and garnish with peanuts and Parsley.
