Instructions
- If needed, chop the stew beef into small chunks.
- Over medium high heat, add the olive oil and heat well. Add the beef and season well with salt and pepper. Stir and cook for 7-10 minutes. Add the Diced Onion, Diced Red Pepper, tomato paste and cook for another 5 minutes. Add the water, stock, cayenne pepper and a touch of salt and bring to a boil for 5 minutes. Reduce heat, add peanut butter and stir well. Add the cornstarch slurry (water and the cornstarch mixed together) and let it cook and thicken for another 5 minutes. Remove from heat and let sit off 3-5 minutes (it will thicken further). Taste and season with more salt if needed. Reserve about 3/4 cup of the stew liquid and a handful of stew beef (cut into smaller pieces now if you like) for the African Peanut Pizza.
- While cooking, heat rice in the microwave.
- Serve stew with rice and garnish with peanuts and Parsley.
