Hey there! Welcome back to another week of Main Day Meals. This week you are in for (mostly) Mediterranean dishes! But don’t worry, we’ll throw in some flavors you aren’t expecting. ;)

SHORT ON TIME ON MAIN DAY?: You can find wild rice sometimes precooked in microwaveable pouches that you can just heat before serving! You can skip cutting the sugar snap peas into smaller cuts if needed, and you can potentially find red onion, parsley, green onions, or zucchini pre-chopped in the produce section!

SAVING VEGGIES: Looking to save those limp vegetables like asparagus and celery from the brink of the compost bin? Begin by trimming the ends to freshen up their ability to take in water. Then, submerge the veggies root-end down into a bowl of ice-cold water. The icy dip rehydrates the cells and brings back their natural crispness, so let them soak for anywhere from 10 minutes to an hour depending on their level of limpidity. Once they've regained their snap and vigor, drain them, pat dry, and they're ready to grace your plate again.
