Verde Black Beans

  1. On a cutting board, finely dice the red onions. Mince the garlic cloves.
  2. Over medium heat in a medium nonstick pan, coat the bottom of the pan in olive oil. Add the red onion and cook, stirring often, for 4 minutes until slightly transluscent. Add the garlic and cook for a minute. Season with a bit of salt and pepper. Add 3/4 of the salsa verde (save the rest for Jerk Chicken Tacos) and the black beans. Bring to a boil and then turn to low so it will simmer while you continue with Main Day.
  3. Set a timer for 30 minutes and stir occasionally.
  4. Once finished, remove from heat and cool before putting in a tight fitting container and refrigerating.
